ABOUT OUR COFFEE
So what is coffee? And how is it produced before it arrives at your doorstep? Well, coffee beans are the seeds of cherries that come from coffee trees. These coffee trees grow all over the world around the equator in countries such as Brazil, Colombia, Ethiopia, India, and Indonesia.
The cherries are harvested by hand, and 25 cherries need to be picked to produce a single cup of coffee! Once the cherries are picked, they are cleaned and dried, and inside one cherry you will find two seeds which we call green beans. The green beans arrive in the UK at our roastery. We blend and roast the green coffee in a drum roaster which takes around 15 minutes. Once roasted, we pack the coffee and deliver it to you.
The growing and harvesting of coffee is extremely complex. There are 124 different species of coffee; however, only two are commercially grown: Arabica and Robusta. At Impresso LTD, we work exclusively with Arabica as we believe this coffee produces a much more delicious cup of coffee. Arabica has many so-called varietals such as Typica, Bourbon, and Caturra. Each varietal has its own unique characteristics.
The processing method of the coffee cherry has a big impact on the flavour as you can dry or wash the cherries or use a variation of those. All of these factors will determine the final flavour of your coffee.
The roasting of the coffee is the second part of the miracle. Coffee roasting is a mixture of science and art. Using the finest green beans to start with, we develop extremely specific roasting profiles to ensure we can extract the maximum flavour from the beans. Each of our coffees has its own unique roasting profile that we carefully develop. We ensure the roast is accurate to within 1°C and within 10 seconds. That is very precise!
